Many people equate fajitas with a sizzling-cast-iron-pan experience at the local Tex-Mex restaurant. While dramatic, that’s not necessary for making smoking-hot fajitas at home. A simple marinade for the chicken, some charred veggies, and a few fixin’s make for an easy and healthy weeknight dinner. Serve the fajitas with some homemade Guacamole.

Ingredients For chicken fajitas

1/2 clime juice

1/4 cvegetable oil

2 clovegarlic cloves, minced

1/2 tsppepper

1/4 tspred pepper flakes, crushed

1/4 tspsalt

6boneless, skinless chicken breasts, cut into strips

1onion, sliced into strips

1 Tbspvegetable oil

6flour tortillas

guacamole

salsa

shredded lettuce

How To Make chicken fajitas

1Combine lime juice, 1/4 cup oil, garlic, pepper, red pepper flakes and salt; pour over chicken. Cover; refrigerate 2 hours

2Drain chicken, discarding marinade.

3In a large skillet, saute chicken and onion slices in remaining oil for 10 to 12 minutes or until done, stirring frequently. Serve on tortillas with guacamole, salsa, lettuce and sour cream, if desired.
