My grandmother used to make this in a cast iron skillet when my brother, sister and I were children. It was always a favorite of ours. The only tweak I made is using steak seasoning which was not available back then. It's a quick, easy, and tasty meal when time is short. Plus it's a great way to get children to eat their veggies! My own children are grown with families of their own but it's still a favorite go-to meal for my husband and I. My husband loves the leftovers, too! The recipe can easily be doubled if needed for a group larger than 4 people.

Ingredients For beefy triple sucotash

1 lbground beef

1 mdonion

1 candiced tomatoes

1 cancorn

1 canlima beans
-
1 crice

2 Tbspcooking oil

2 tspgarlic powder
-
salt and pepper

2 tspmontreal steak seasoning

3 Tbspworcestershire sauce
How To Make beefy triple sucotash

1Chop the onion

2Add 2 tbsp oil to skillet on medium high heat

3Put the chopped onion in the skillet and start browning them
-
4When the onions are brown add in 3 tbsp of Worcestershire sauce and stir

5Add the ground beef to the onion mixture and brown it, stirring to get the onion and meat combined and thoroughly cooked

6Add salt and pepper to taste, the garlic powder, and the steak seasoning, stirring to combine

7Drain the corn and lima beans and add to the skillet and stir

8Add the diced tomatoes juice included and stir. If you'd like a bit of spice use Rotel with green chilies

9Lower the heat to simmer uncovered to allow some of the liquid to reduce, stirring occasionally. It should be somewhat juicy but not watery

10Cook rice (any type you like) according to package directions. If you use brown or a long cooking rice you may want to start cooking it before you start cooking the onions and ground beef and veggies

11Serve the beef mixture over the rice. Add a side salad and some crusty garlic bread if you like
