This is another of our family favorites, picked up years ago from the Great American Recipes card set. It is so flavorful that I had to cut the two peppers back by 1/3!

Make slits all over beef roast. Cut the garlic into slivers. Insert into the slits. Place meat into a crockpot. Add water, bay leaves, red pepper, oregano, salt, and pepper. Cover tightly. Cook approximately 2 hours per pound up to 10 hours. Remove meat from pan. With a sharp knife, cut into paper-thin slices or shred. Remove grease from juices in pan. Return beef slices to the juices. Serve hot with juices spooned over servings of the beef, piled into split hoagie buns.
