The first time I made this I was thinking that I will be able to freeze the leftovers for another meal, but the family loves this so much it never made it to the freezer.

Ingredients For cheese & beef tamale pie

2 lbground beef
-
3/4 ccolby/monterey jack cheese, shredded

2 pkgcorn muffin, mix
-
1/4 cwater
-
8 ozsalsa, chunky
-
1 canblack olives, sliced
-
1 cannacho cheese soup
-
1onion, chopped
-
2red or green bell peppers
-
tomatoes, chopped
How To Make cheese & beef tamale pie

1In 12" skillet cook ground beef, peppers and onions until meat is brown.

2Stir in soup, black olives, salsa and water.

3Bring to boiling; reduce heat.

4Simmer, uncovered, for 5 minutes and then remove from heat.

5Prepare corn muffin mix according to package.

6Spread 1/2 into greased 13 x 9 baking pan.

7Spoon the hot meat mixture over muffin mix.

8Carefully spread remaining corn muffin batter over meat mixture.

9Bake at 350 for 30 to 35 minutes until muffin layer is golden.

10Top with cheese.

11Garnish with olives and tomatoes.
