I took my dads basic roast recipe and added cajun seasonings to it. I'll be making this tonight for our sunday supper, along w/ cajun roasted potatoes. Yummy!

Ingredients For cajun-flavored roast

12-1/2 lb beef chuck pot roast

1 Tbspcajun seasoning

1/2 tsphot pepper sauce
-
1/8 tsppepper
-
114-1/2 oz can diced tomatoes w/ chiles, undrained

1 mdgreen bell pepper, cut into strips

1 mdred bell pepper, cu into strips

1 mdyellow bell pepper, cut into strips
How To Make cajun-flavored roast

1trim any fat from meat. W/ fingers, rub cajun seasining into meat. Cut meat to fit into a 4-quart slow-cooker.

2Add hot sauce and pepper to slow-cooker. Pour tomatoes w/ their juice over meat. Cover, cook on low 8-10 hrs, or on high for 4-5 hrs.

3Add peppers the last 30 mins of cook time. Transfer meat to cutting board. Slice and place on a lg platter. drain veggies and serve w/ meat.
