I haven't made this pie yet, but thought it sounded interesting. I found this recipe in the "Red Hat Society Cookbook".

Ingredients For macaroon pie

3eggs
-
1 clight corn syrup
-
1/2 csugar
-
2 Tbspbutter, melted

1/4 tspalmond extract
-
1/8 tspsalt
-
3 1/2 ozcan flaked coconut

1 csliced almonds, or chopped pecans

19 inch unbaked pie crust
How To Make macaroon pie

1Preheat the oven to 350 degrees. In a medium bowl, beat the eggs slightly. Beat in the corn syrup, sugar, butter, almond extract, and salt. Stir in the coconut and nuts. Pour into a pie crust. Bake for 50 minutes, or until a knife inserted halfway between the center and edge comes out clean. Cool before serving.
