Ingredients For blueberry squares

  • 1 1/2 c
    sugar
  • 1/4 c
    corn starch
  • 1/4 c
    instant tapioca
  • 6 c
    fresh blueberry
  • 4 c
    flour
  • 2
    beaten eggs
  • 1/4 c
    lemon juice
  • 6 Tbsp
    water
  • 1/4 c
    cold butter
  • 1 1/2 tsp
    salt
  • 1 c
    powder sugar
  • 2 Tbsp
    butter, melted
  • 2 Tbsp
    milk
  • 1 1/2 c
    crisco

How To Make blueberry squares

    In a bowl mix the sugar, corn starch and instant tapioca. set aside. In a large bowl mix the flour and salt, With a pastery knife cut in the shortening till the pieces are the size of small peas. In a small bowl combine the eggs, lemon juice and water. Add to the flour mixture, mix till it all comes together and then divide the dough, On a lightly floured surface, roll one half the pastery to fit a 15x10x1 inch jelly roll pan. Sprinkle half of the suger mixture on crust and then add the fresh berries then sprinkle the remaining sugar over the berries. Slice the 1/4 cup butter around over berries. Roll remaining dough to fit the top of berries crimp and seal the edges. Cut several slits into top of pastery sprinkle extra sugar over crust. Bake in a 375 degree preheated oven for 35 to 40 minutes or till crust is golden. Drizzle powder sugar icing over hot pie. Powder sugar icing In a bowl combine 1 cup powder sugar, 2 tablespoons melted butter and 2 tablespoons milk mix together and Drizzle over pie.
