blueberry oatmeal muffins

Early one Saturday morning, I decided to make some muffins. I didn't have the raisins I needed for the recipe but I did have frozen blueberries. I defrosted them, made these muffins and voila! Blueberry yumminess!

Ingredients For blueberry oatmeal muffins

1 call purpose flour

1/2 cquick oats, uncooked

1/4 cbrown sugar, lightly packed

2 tspbaking powder

1/4 tspsalt
-
1/4 tspground allspice
-
2/3 cmilk (i used 2% because that's what was in the fridge)

2eggs, slightly beaten
-
2 Tbspvegetable oil
-
1 cblueberries, fresh or frozen (thaw if frozen)
How To Make blueberry oatmeal muffins

1Preheat oven to 400 degrees. Line 12 regular-sized muffin cups with liners, or spray with non-stick vegetable spray.

2In a large bowl, combine flour, oatmeal, sugar, baking powder, salt and allspice. In a smaller bowl, slightly beat eggs then add milk and vegetable oil. Add to dry ingredients and stir until just moistened. Batter will be lumpy. Fold in blueberries.

3Fill each muffin cup 2/3 full with batter. Bake for 20 minutes at 400 degrees or until a toothpick inserted comes out clean. Enjoy!
