I think that these are really delicious and fun to take places, because they are not only a taste treat, but they are unusual! YUM!

Ingredients For spiced apricot bars

  • 1 c
    all purpose flour
  • 1/2 tsp
    baking powder
  • 1/4 tsp
    baking soda
  • 1/4 tsp
    cardamom or 1/8 teaspoon of ground nutmeg
  • 1
    egg, slightly beaten
  • 1/2 c
    brown sugar, packed
  • 1/2 c
    apricot nectar or orange juice
  • 1/4 c
    unsweetened applesauce
  • 1 1/2 Tbsp
    vegetable or canola oil
  • 1/2 c
    finely snipped dried apricots
  • 1
    recipe of apricot icing
  • apricot icing
  • 1/2 c
    sifted powdered sugar
  • enough apricot nectgar or orange juice (2-3 teaspoons) to make icing of drizzling consistency.

How To Make spiced apricot bars

    In a medium bowl stir together the flour, baking powder, baking soda and the cardamom; set aside. In another bowl stir together the egg, brown sugar, apricot nectar, applesauce and oil until combined. Add egg mixture to flour mixture,m stirring just until combined. Stir in the apricots.

    Spread batter in an ungreased 11" x17" x1 1/2" baking pan. Bake in a 350F degree oven for 20-25 min. or until a wooden skewer inserted into or near the center comes out clean. Cool on a wire rack for 2 hours. Drizzle with apricot icing. Cut into bars.
