Trying to think of new ways to use my rhubarb. This cake is so light and delicious.

Ingredients For rhubarb coffee cake

1/2 cbutter or margarine
-
1 1/2 csugar

2eggs
-
1 csour cream
-
1 tspvanilla
-
2 call purpose flour
-
1 tspbaking soda
-
2 cfinely chopped rhubarb
- TOPPING

1/2 cpacked brown sugar

1 Tbspall purpose flour
-
1 tspcinnamon
-
1 Tbspbutter or margarine softened

1/2 cwalnuts (optional)
How To Make rhubarb coffee cake

1Preheat oven to 350. Cream butter and sugar. Add eggs one at a time. Stir in sour cream and vanilla.

2Mix flour and baking soda and fold into wet batter. Stir in rhubarb. Spread in a greased 13x9 pan. Mix topping all together and sprinkle over top.

3Bake for about 30-40 mins. or until toothpick comes out clean.
