I love useing my giant cupcake maker, Its pretty easy to use and I have alot of fun with it! I have used for baby showers and birthdays. Today my daughter asked me to make a chocolate one for her boyfriends birthday. A simple cake mix with some added twist. Hazelnut Mocha Chocolate with a balsamic blackberry filling with a chocolate ganach.

Ingredients For giant mocha choc cupcake w/blackberry balsamic

  • 1 box
    dark chocolate cakemix
  • 3
    eggs
  • 1/3 c
    vegetable oil
  • 1 c
    hazelnut coffee (room temp)
  • 1 c
    frozen blackberries
  • 1/4 c
    white balsamic vinegar
  • 1 tsp
    sugar
  • 2 c
    semi sweet chocolate chips
  • 1 1/2 c
    heavy cream

    Combine cakemix coffee oil and eggs, beate for 2-3min on med.

    Lightly spray silicone cupcake pans. equally distribute cakemix between and put sprayed cake insert to make well for filling. Bake 25=35 min. till toothpick comes out clean. Cool completely before removing from silacone

    Meanwhile in small saucepan add berries, sugar and balsamic and just warm for 5 mins breaking berries down. Let cool.

    When cake is cooled remove insert and remove cakes. Fill welll with berries, add top of cupcake and decorate.

    I made a ganache with warmed cream adding chocolate to melt.
