This is a great way to use leftover mashed potatoes and corned beef. Crispy on the outside, tender on the inside... yum!

1 1/2 tspvegetable oil

1/2 smonion, chopped

1 cmashed potatoes

1/2 ccorned beef, cooked and shredded

ground black pepper
How To Make corned beef hash fritters

1Heat oil in a large skillet over medium heat.

2Fry onion in oil until translucent. Transfer to a medium bowl, and mix with mashed potatoes and corned beef. Season with pepper.

3Form into four patties. Fry patties in the skillet over medium-high heat until golden brown and slightly crispy on both sides.
