I have this new thing with Biscoff and Speculoos, and I hat oatmeal. My Dad says I need to gain weight, and he say's I should eat oatmeal (yuck!). With as hard as I try I just can't like oatmeal. So I figured that if I could use the oatmeal and speculoos to cook other things with I would be able to eat oatmeal. This is one of those recipes, I put the bananas on it for Bubba, because I hate bananas too!!! I put blueberries on mine.

Ingredients For speculoos oatmeal pancakes

  • 1/4 c
    speculoos spread
  • 1 lg
    egg
  • 2 Tbsp
    sugar
  • 2 Tbsp
    butter, melted
  • 3/4 c
    whole milk
  • 3/4 c
    all-purpose flour
  • 1/2 c
    quick cooking oats
  • 2 tsp
    baking powder
  • 1/4 tsp
    salt
  • blueberries, sliced bananas or strawberries (optional)
  • SPECULOOS SYRUP
  • 1/4 c
    speculoos spread
  • 1/3 c
    pure maple syrup

How To Make speculoos oatmeal pancakes

    Whisk together SPECULOOS Spread, egg, sugar and butter in a large bowl.

    Gradually whisk in milk.
  • 3
    Combine oats, flour, baking powder and salt.
  • 4
    Add to milk mixture whisking just until dry ingredients are moistened.

    Lightly butter or grease a griddle or large nonstick skillet.

    Place over medium heat until hot and drop of water sizzles.

    Drop batter by scant 1/4 cupful's (about 3 tablespoons for each pancake) onto hot griddle.

    Cook until bubbles form and pancakes are golden brown on bottom.

    Turn; continue cooking 1 minute or golden brown.

    Serve topped with fruit if desired and drizzle Speculoos syrup over pancakes.

    Speculoos syrup: Whisk together Speculoos Spread and Pure Maple Myrup. One serving is 1 1/2 tablespoons per pancake serving.
