    onion, thinly sliced
  • 1 lb
    sweet potatoes, (about 2 medium), peeled and coarsely grated
  • 1/4 tsp
    sea salt
  • 2/3 c
    finely diced black forest ham, (4 ounces)
  • 1/2 tsp
    thyme

    Heat the oil in a large non stick skillet over medium high heat

    Add onion

    Saute, stirring often, until softened and lightly browned, 3 to 4 minutes.
