This is my SIL (Brenda Neal) recipe and it is really good! I don't know where she got it. She's had it for 20 or 30 years. I think that possibly it has been passed down in her family. I'll try to remember to ask her. That would be kind of interesting to know.

Ingredients For zucchini bread

  • 3 1/4 c
    all purpose flour
  • 1 1/2 tsp
    salt
  • 2 tsp
    baking soda
  • 1 tsp
    nutmeg
  • 1 tsp
    cinnamon
  • 3 c
    sugar
  • 1 c
    vegetable oil
  • 4
    eggs, beaten
  • 1/3 c
    water
  • 2 c
    grated zucchini
  • 1 tsp
    lemon juice
  • 1 c
    chopped walnuts or pecans

How To Make zucchini bread

    Preheat oven to 350 degrees F. Bake in 2 loaf pans sprayed with nonstick spray or alternately, bake in 5 mini loaf pans.

    In a large bowl, combine flour, salt, baking soda, nutmeg, cinnamon and sugar.

    In a separate bowl, combine oil, eggs, water, zucchini and lemon juice.

    Mix wet ingredients into dry, add nuts and fold in.

    Bake in 2 standard loaf pans sprayed with nonstick spray, for 1 hour or until a tester comes out clean.

    ***Alternately, bake in 5 mini loaf pans for about 45 minutes. Don't overcook.
