Cassie, the pleasure was all mine and simply sweet!! Another awesome thing about this cake was not having to be burden with so much butter or oil. It takes one stick of butter for the frosting. With the cost of butter these days it only compliments this recipe even more. Less fat and calories is always a winner to a great cake!! I also wanted to mention that all ovens vary , it took 38 mins to bake. I check each recipe in time length about ten mins before. Much appreciation for this recipe

I had my husband to pick one of my favorite cake pins and of course he choose this one for his love of pineapple and pecans. I toasted my pecan with 2 tbs of butter. The recipe called for a cup but wanted some on top of the cake as shown in pic. I only had 16 oz can of crushed pineapples in my pantry so for my worries of the cake tasting dry I decided to add 1/3 cup of unsweetened applesauce. I also used 1/2 tsp of vanilla and 1/2 tsp of coconut flavoring both in the cake recipe and frosting. I love the combination of coconut with pecans and pineapples so I toasted 1/4 cup of coconuts to add along with the toasted butter pecans. I did as per directions and made my frosting ten mins. before the cake was due out of the oven. Poured it over the cake as it just came out of the oven and adding my coconut and pecans. The aroma from the cake filled my house with a tropical scent..... Because of that we were tortured not to wait until I finished making our dinner. The look in my husbands face when he took those first two bites were all I needed. It was confirmation that this is a keeper. I am sure that this will be made for many occasions or just cause. The best part about it this recipe besides it being scrumptious , so easy and fast to make. No box cake will match a cake from scratch......Enjoy, we did!!!❤️
