Eager to try, as potatoes are gluten free, which I have recently become. Just need to figure out right almond/rice/chickpea blend of flours to sub for flour. New at this, if anyone on the site knows? I may just try a blend I bought. It'll be a healthful, high protein, yummy sweet! Win-win!
