Ingredients

2 c sugar
3/4 c butter or margarine
1 c hot mashed potatoes
1 c cocoa
1 tsp ground cloves
1 tsp nutmeg
1 tsp cinnamon
1 c walnut pieces
4 eggs, divided
1/2 c milk
2 c flour
2 tsp baking powder
1/2 tsp salt

Sprinkle the top with powdered sugar and you'll be thrilled with this delectable, lovely cake! Mashed potatoes... who knew?!

 

Directions

Cream together the butter and sugar.

Add the egg yolks and milk and beat.

Add in the chocolate and hot mashed potatoes.

Add the flour, baking powder and spices and salt, and then the nuts, and beat.

Beat the egg whites and then fold them into the batter.

Spread in a square pan and bake at 350 degrees for one hour or until cake is done.

Not to sound silly but do you just mashed them or add milk and butter as one would normally do when making mashed potatoes.

My Great-grandma used to make this. I have the recipe in her handwriting! I love it. It is an easy way to use up mashed potatoes. My Gramma P was English, a Lewellen-Pound. Maybe it came from the "mother land"!
