Carolyn, Blind baked means an unfilled crust baked to receive a filling. I put my crust into my pie plate, put a piece of foil inside loosely and pour my ceramic pie weights inside to keep the crust nice and flat on the bottom. You can also prick the bottom and sides of the crust before baking or you can place a smaller pie plate over the crust to keep it flat. Hope this helps.
