quick vegetable-spinach w/tortellini soup

This soup was taken from an old recipe book of my mother's. This was the last meal I prepared for her in 2004 before she passed away. She saw a picture of this soup in her book and said it looked good. So I went to the store, purchased the ingredients and made it for her...to her surprise, as she wasn't eating very well at that time any longer. This is a special recipe to me., and I hope you enjoy it. It takes a very short time to prepare.

Ingredients For quick vegetable-spinach w/tortellini soup

  • 4 c
    water (you could use chicken broth as an option)
  • 1 pkg
    vegetable soup mix (knorr)
  • 1 - 10 oz
    pkg frozen chopped spinach - thawed & sqeezed. ( i used 2 cups fresh and cut it up)
  • 1 - 9 oz
    pkg. refrigerated beef or cheese tortellini pasta (i used the multi-colored pasta cheese filled this time in the picture).
  • --
    parmesan cheese - freshly grated
  • --
    black pepper

How To Make quick vegetable-spinach w/tortellini soup

    Very simple: Place water, or broth, in a 3 qrt pot, with the vegetable soup mix. Simmer 5 minutes. - Add spinach and tortellini, and simmer an additional 5-7 minutes - until pasta is tender. -- Serve with grated parmesan or romano on top.
