Didn't want to cook but knew I needed something fast so I looked in the cabinet and came up with this microwave soup. Nothing fancy, but pretty doggone good In A Minute.

Ingredients For pam's "in a minute" soup

  • 1 can
    chicken broth
  • 1 can
    diced tomatoes, any style like with onion and peppers, italian, with oregano and garlic, etc.
  • 2 to 3 tsp
    brown sugar
  • 2 dash
    hot pepper sauce (i use tabasco jalapeno /green sauce)
  • 2 slice
    spam, cubed (about 3/8 inches thick) or you can sub 4 oz cooked chicken or ham, or proscuitto or turkey bacon, almost any cooked meat)
  • 1 to 2 tsp
    prepared horseradish
  • 1 Tbsp
    freeze dried chives
  • 2 to 3 Tbsp
    cornstarch stirred into about 2 to 3 tbsp cold water.
  • 3 or 4 oz
    sour cream
  • FOR VEGETARIAN VERSION: USE VEGETABLE BROTH AND OMIT MEAT (AND SOUR CREAM FOR VEGAN)

How To Make pam's "in a minute" soup

    Put everything except the sour cream in a large microwaveable bowl, stir well and microwave until hot and thickened. 7 to 10 minutes depending on your microwave. Stir each minute or two to distribute heat through the soup and distribute the cornstarch more evenly.

    Add Sour Cream and stir vigorously until blended. Serve with crackers or buttered toast if necessary. LOL
