Ingredients

    (14.5 oz.ea.) reduced-sodium chicken broth
  • 1 can(s)
    (15 oz.) red kidney beans, drained
  • 1 can(s)
    (15 oz.) canellini beans, drained
  • 2 can(s)
    (14.5 oz.ea.) diced tomatoes
  • 6
    carrots, thinly sliced
  • 1 bunch
    scallions, sliced
  • 3/4 tsp
    italian seasoning
  • 1 pkg
    (12 oz.) rotini
  • 1 pkg
    (10 oz.) frozen spinach, thawed

How to Make ONE MORE CLASSIC MINESTRONE

Step-by-Step

  1. Place broth, beans, tomatoes (with juice), carrots, scallions, and Italian seasoning in slow cooker. Stir to combine.
  2. Cover and cook on LOW setting for 4 to 6 hours.
  3. When soup is almost ready, cook pasta according to package directions. Drain and add to cooker with spinach; stir.
  4. Cover and cook another 15 minutes.
