Also called New Year's Day Soup. We had leftover ham; so I searched through my cookbooks and found this recipe (in Southern Living book)! I made a few changes. It is absolutely wonderful and healthy! I could eat it everyday! It you would like a vegetarian version use vegetable broth and leave out the ham.

Ingredients For good luck soup

  • 1 c
    ham, cooked, diced
  • 2
    celery ribs, chopped
  • 1 md
    sweet onion, chopped
  • 2
    carrots, chopped
  • 2
    garlic cloves, minced
  • 2 can
    (15 oz each) black eyed peas, undrained (or 1 1/2 cups dried, cooked)
  • 2 can
    14 1/2 oz each) low sodium, fat free chicken broth, or vegetable broth
  • 1 can
    (28 oz) diced tomatoes, undrained
  • 1 can
    (8 oz) tomato sauce
  • 1 box
    frozen spinach, (or 1 1/2 cups chopped fresh)
  • 1/2 c
    fresh parsley, chopped (or 1/4 cup dried parsley)
  • 1/2 tsp
    black pepper

How To Make good luck soup

    Saute first 5 ingredients over medium heat in a large soup pan, until vegetables are tender.

    Stir in black eyed peas and next 4 ingredients; bring mixture to a boil. Cover, reduce heat, and simmer 1 1/2 hours. Stir in spinach, parsley and pepper. Serve.

    Note: I used dried black eyed peas (soak over night), and then cook for 1 1/2 hours; drain most of the liquid and then proceed with recipe. I used frozen spinach and dried parsley and added when I added the beans to the sauteed veggies. If you want to cook in the slow cooker just throw everything in and cook for 5 or 6 hours.
