Ingredients For dads baked potato soup

1/2 conion, chopped

1/2 ccelery, chopped

3 Tbspunsalted butter, divided

4 clight cream
-
1/2 tspsalt
-
1 tspwhite pepper
-
3 Tbspflour
-
2 lgbaked potatoes, peeled, cut into small cubes

1/2 clight sour cream
-
1 creduced-fat, shredded cheddar cheese
-
1/2 ccooked bacon, crumbled

2 Tbspchopped chives
How To Make dads baked potato soup

1In pot over med-high heat, saute onion and celery in 1 tbsp butter until soft. In bowl, mix light cream salt and pepper. Stir cream mix into onion mix. Heat to boiling, stirring occasionally for 2 mins. Remove from heat.

2Heat 2 tbsp butter in saucepan until melted. Whisk in flour. Whisk constantly for 3 mins. Mix into light cream mix. Cook until thickened, stirring constantly.

3Add potatoes, mix well. Cook until potatoes are tender, about 5-10 min. Ladle soup into bowl. Top each bowl w/ a spoonful of sour cream. Sprinkle w/ cheese, bacon and chives.
