sweet potato & celery soup w/barley

I made up a pot of this soup tonight for dinner 4/23/13 and it was delicious. My husband Anthony, my Mom & I all enjoyed the unique flavor of having sweet potato added into this veggie soup. I've always loved barley added into a recipe because of it's nutty flavor and chewy texture. This recipe is from my Ninja Cookbook.

Ingredients For sweet potato & celery soup w/barley

  • 1 Tbsp
    olive oil
  • 4 stalk
    celery, chopped
  • 1 md
    onion, coarsely chopped
  • 3 clove
    garlic, minced
  • 2 lg
    roasted sweet potatoes, peeled & diced
  • 1 can
    tomatoes, diced
  • 1/2 c
    pearl barley, quick cook
  • 8 c
    vegetable broth
  • SPICES
  • 1 tsp
    oregano, dried
  • 1 tsp
    basil, dried
  • 2 tsp
    beau monde seasoning
  • 1 tsp
    black pepper & salt

How To Make sweet potato & celery soup w/barley

    Drizzle oil into pot and set on STOVETOP HIGH. Heat oil for several minutes, then add celery & onion to pot. Cook them uncovered 10 minutes or until veggies are tender-crisp, stirring occasionally. Add minced garlic & cook uncovered 2 minutes, stirring often.

    Stir in your potatoes, spices, tomatoes & barley. Set to SLOW COOK HIGH FOR 3 - 4 hours. Cover pot and cook until the barley & potatoes are tender.

    1/17/2022 - I made a big pot of this soup on what was considered the biggest snow day we have had in Ohio since 1993. It took us hours to clean off 3 cars in the front, plow drives ways and sidewalks. We ended up with almost 14 inches. It was a beautiful snow day that we will all remember for years to come.
