broccoli and rice soup
I find that this soup makes a healthy and filling meal in it's self. It's also a great starter or side and is always a hit.

Ingredients For broccoli and rice soup

1 crice, a varity of rices is nice to use here such as red, black and white

2carrots, chopped

1 ozyellow onion, diced

1garlic clove, minced or crushed as you prefer

2broccoli heads, cut into small pieces

1 Tbspolive oil

1 Tbspbutter or margarine

2 qtvegetable stock
How To Make broccoli and rice soup

1follow rice package directions until just until barely tender. About 30 minutes. Do not drain, keep any remaining liquid .

2In a large soup pot or Dutch oven, on medium heat melt butter with oil. Add carrot/onion and saute until onion is tender. Add garlic and saute until just fragrant. Add broccoli and also saute for 5 minutes.

3Add stock and rice with it's liquid. Simmer for about 20 minutes. Season with salt and pepper to taste.
