I find that this soup makes a healthy and filling meal in it's self. It's also a great starter or side and is always a hit.

Ingredients For broccoli and rice soup

  • 1 c
    rice, a varity of rices is nice to use here such as red, black and white
  • 2
    carrots, chopped
  • 1 oz
    yellow onion, diced
  • 1
    garlic clove, minced or crushed as you prefer
  • 2
    broccoli heads, cut into small pieces
  • 1 Tbsp
    olive oil
  • 1 Tbsp
    butter or margarine
  • 2 qt
    vegetable stock

How To Make broccoli and rice soup

    follow rice package directions until just until barely tender. About 30 minutes. Do not drain, keep any remaining liquid .

    In a large soup pot or Dutch oven, on medium heat melt butter with oil. Add carrot/onion and saute until onion is tender. Add garlic and saute until just fragrant. Add broccoli and also saute for 5 minutes.

    Add stock and rice with it's liquid. Simmer for about 20 minutes. Season with salt and pepper to taste.
