3carrots, chopped

1onion, chopped

1head of cabbage, chopped

2 qtlow-sodium chicken broth

2 tspminced garlic

1/2 tspsalt

1/2 tsppepper

1/4 tspdried basil

1/4 tspdried oregano

1/4 tspmarjoram

1 canitalian-style diced tomatoes, drained

2celery stalks, chopped

1-1/2 Tbspcanola oil
How To Make beat the cold soup

1In lg pot, heat oil over medium heat. Stir in onion, garlic, celery and carrots. Cook until onion is soft.

2Stir in chicken broth, salt, pepper and spices. Bring to a boil. Stir in cabbage. Simmer until cabbage is wilted. Stir in tomatoes. Let simmer for 40 mins, stirring occasionally.
