    carrots, chopped
  • 1
    onion, chopped
  • 1
    head of cabbage, chopped
  • 2 qt
    low-sodium chicken broth
  • 2 tsp
    minced garlic
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper
  • 1/4 tsp
    dried basil
  • 1/4 tsp
    dried oregano
  • 1/4 tsp
    marjoram
  • 1 can
    italian-style diced tomatoes, drained
  • 2
    celery stalks, chopped
  • 1-1/2 Tbsp
    canola oil

How To Make beat the cold soup

    In lg pot, heat oil over medium heat. Stir in onion, garlic, celery and carrots. Cook until onion is soft.

    Stir in chicken broth, salt, pepper and spices. Bring to a boil. Stir in cabbage. Simmer until cabbage is wilted. Stir in tomatoes. Let simmer for 40 mins, stirring occasionally.
