1 Tbsprawspicebar’s berbere spice

3 Tbspcoconut oil

1onion, chopped

3cloves garlic, minced

1inch fresh ginger, minced

2chili peppers, minced

114 oz. can crushed tomatoes (or use fresh if available)

2 Tbsptomato paste
-
3 cvegetable broth
-
1/2 cpeanut butter
-
1butternut squash, cooked & cubed

2 Tbspvinegar

salt & pepper, to taste, plus cilantro, peanuts, to serve (optional)
How To Make african peanut soup, vegan

1Warm the oil in a large saucepan. When shimmering, add the onion, garlic, ginger, chilis, and RawSpiceBar’s Berbere Spice and cook on medium heat until softened, about 5 minutes.

2Add the rest of the ingredients, stir well, and bring to a boil. Reduce heat to a simmer. Cook for 20 minutes, stirring occasionally.

3Season to taste. Top with cilantro and peanuts and serve and enjoy!
