    rawspicebar’s berbere spice
  • 3 Tbsp
    coconut oil
  • 1
    onion, chopped
  • 3
    cloves garlic, minced
  • 1
    inch fresh ginger, minced
  • 2
    chili peppers, minced
  • 1
    14 oz. can crushed tomatoes (or use fresh if available)
  • 2 Tbsp
    tomato paste
  • 3 c
    vegetable broth
  • 1/2 c
    peanut butter
  • 1
    butternut squash, cooked & cubed
  • 2 Tbsp
    vinegar
  • salt & pepper, to taste, plus cilantro, peanuts, to serve (optional)

How To Make african peanut soup, vegan

    Warm the oil in a large saucepan. When shimmering, add the onion, garlic, ginger, chilis, and RawSpiceBar’s Berbere Spice and cook on medium heat until softened, about 5 minutes.

    Add the rest of the ingredients, stir well, and bring to a boil. Reduce heat to a simmer. Cook for 20 minutes, stirring occasionally.

    Season to taste. Top with cilantro and peanuts and serve and enjoy!
