  • 5 slice
    bacon, choppd
  • 1 medium
    onion, choppd
  • 2 stalk(s)
    celery, choppd
  • 2 clove
    garlic, smashd
  • 1 large
    zucchini, diced
  • 1 large
    bay leaf
  • 1/2 tsp
    salt
  • 1/4 tsp
    blk pepper
  • 6 c
    chickn broth
  • 1 can(s)
    garbanzo beans (not draind 15 oz)
  • 1 can(s)
    white cannellini beans ( not draind 15 oz)
  • 1 c
    fresh green beans 1 1/2 " pieces (can use more)
  • 1 c
    any small pasta (mini penne, ditalini or mini shells)
  • 6 large
    leaves of basil torn or a tsp of pesto
  • 2 c
    fresh spinach, washd n torn
  • 1 c
    parmesan cheese, divided

How to Make GREEN MINESTRONE

Step-by-Step

  1. HEAT OLIVE OIL IN LARGE POT N ADD CHOPPD BACON N COOK FOR 3 MINUTES.
  2. NOW ADD ONIONS, CELERY, GARLIC, BAY LEAF, AND ZUCCHINI N SEASON WITH S n P. STIRRING N COOK FOR 5 MINUTES
  3. ADD WHITE BEANS N GARBANZO BEANS N CHICKN BROTH COVER N BRING TO A BOIL.
  4. ADD PASTA N GREEN BEANS N COOK FOR 8 MORE MINUTES. REMOVE BAY LEAVES!
  5. STIR IN SPINACH TO WILT ...ONE MORE MINUTE.
  6. STIR IN 1/2 CUP GRATED CHEESE (OTHER 1/2CUP FOR INDIVIDUAL BOWLS) n STIR IN BASIL OR PESTO IF USING (I USED A FROZEN CHUNK OF PESTO ;)
  7. LADLE INTO BOWLS N TOP WITH GRATD CHEESE...ENJOY :)
