I had a nice bunch of fresh organic celery I wanted to put to use and I was thinking about cream of celery soup. The only recipe for it I've ever tried was terrible, so I figured I would wing it and invent my own. Here it is, and it's pretty darn good!

Ingredients For ellen's creamy cream of celery soup

  • 3 Tbsp
    butter
  • 2 c
    chopped celery, with a few leaves
  • 1/2 c
    chopped onion
  • 2 clove
    garlic, minced
  • 1 c
    chicken broth, low salt, low fat
  • 1 c
    milk
  • 1 c
    sour cream
  • 2
    bay leaves
  • 1/4 tsp
    celery seed
  • salt and pepper to taste
  • 1 tsp
    cornstarch

How To Make ellen's creamy cream of celery soup

    In a large saucepan, melt butter; add onion and celery and cook over medium heat about 10-15 minutes until tender. Add the garlic and cook another minute.

    Stir in the chicken broth, milk, and sour cream; mix thoroughly.

    Add the bay leaves, salt and pepper to taste. Reduce heat and simmer about 15 minutes or until heated through.

    Sprinkle cornstarch into soup and stir until it starts to thicken slightly.

    Serve while hot. Delicious with a crusty bread or crackers. Or sprinkle some seasoned croutons over the soup for extra flavor.
