A great way to stretch a couple of extra meals from your Thanksgiving turkey that can also be frozen and enjoyed anytime. This is almost as popular as the turkey dinner itself at our house. Works exactly the same with chicken. Enjoy!

Don't toss the carcass after you're done with Thanksgiving turkey. Save it (and the leftover turkey) to make this turkey noodle soup. It's a savory soup with a well-balanced flavor. Adjust the seasonings to your liking. This will warm you up on a cold day and is perfect when you don't want a heavy post-Thanksgiving meal. It makes a large batch. Freeze extras to enjoy at a later date.

Ingredients For thanksgiving turkey noodle soup

    water
  • 1
    turkey carcass/bones
  • 6 oz
    leftover turkey - small pieces
  • 1 lg
    onion - chopped
  • 3 lg
    carrots - sliced
  • 3
    ribs celery - sliced
  • 3 md
    potatoes - cubed
  • 1 Tbsp
    salt or to taste
  • 1 tsp
    dried parsley
  • 1
    bay leaf
  • 1/2 tsp
    black pepper or to taste
  • 1/2 tsp
    dried sage
  • 1/2 tsp
    dried thyme
  • 6 oz
    dry egg noodles

How To Make thanksgiving turkey noodle soup

  • Turkey carcass and water in a large pot.

    Combine turkey carcass (use whatever fits!) and water in a large soup pot and boil for 1 hour.
  • Picking turkey off the carcass.

    Remove carcass and bones. Allow to cool and pick off any loose meat pieces. Return meat to stock.
  • Leftover turkey, onion, carrots, celery, potatoes, bay leaf, and seasonings in a pot.

    Add extra leftover turkey meat as needed, onion, carrots, celery, potatoes, bay leaf, and all seasonings. Simmer for 1 hour.
  • Boiling egg noodles.

    Cook egg noodles in a separate pot according to instructions.
  • Cooked noodles rinsed and cooling.

    Rinse noodles in cold water and allow to cool.
  • Noodles added to the soup.

    Add noodles to soup and serve.
