A great way to stretch a couple of extra meals from your Thanksgiving turkey that can also be frozen and enjoyed anytime. This is almost as popular as the turkey dinner itself at our house. Works exactly the same with chicken - Enjoy!

Ingredients

  • 13 c
    water
  • 1
    turkey carcass/bones
  • 6 oz
    leftover turkey - small pieces
  • 1 large
    onion - chopped
  • 3 large
    carrots - sliced
  • 3
    ribs celery - sliced
  • 3 medium
    potatoes - cubed
  • 1 Tbsp
    salt or to taste
  • 1 tsp
    dried parsley
  • 1
    bay leaf
  • 1/2 tsp
    black pepper or to taste
  • 1/2 tsp
    dried sage
  • 1/2 tsp
    dried thyme
  • 6 oz
    dry egg noodles

How to Make Thanksgiving Turkey Noodle Soup

Step-by-Step

  1. Combine turkey carcass (use whatever fits!) and water in a large soup pot and boil for 1 hour.
  2. Remove carcass and bones - allow to cool and pick off any loose meat pieces. Return meat to stock.
  3. Add extra leftover turkey meat as needed, onion, carrots, celery, potatoes, bay leaf and all seasonings and simmer for 1 hour.
  4. Cook egg noodles in a separate pot according to instructions.
  5. Rinse noodles in cold water and allow to cool.
  6. Add noodles to soup and serve.
