smoked sausage and kale soup

My daughter cooks with kale all the time. I thought I would try it when I saw that the grocery store had it on sale. So I made this soup. It turned out so good, especially the next day. I will be cooking with it more often.

Ingredients For smoked sausage and kale soup

  • 2 Tbsp
    olive oil, light
  • 2 c
    seasoning vegetables blend, onions, celery and peppers
  • 3 clove
    garlic, chopped
  • 1/8 tsp
    red pepper flakes
  • 3 c
    chicken broth, low salt
  • 2 c
    water
  • 1
    bay leaf
  • 2 Tbsp
    worcestershire sauce
  • 1 can
    chick peas
  • 1
    parmesan cheese rind.
  • 2 c
    fresh kale, chopped or torn into bite size pieces
  • 1 lb
    smoked sausage,sliced
  • 1 Tbsp
    soy sauce
  • 1/2 tsp
    oregano, dried

How To Make smoked sausage and kale soup

    In a large pot or dutch oven, brown sausage in olive oil. Remove and set aside. Add the vegetable seasoning blend, salt , pepper and cook until soft. Add garlic and red pepper flakes to cook for a minute more.

    Pour in chicken stock and water. Add bay leaf, chick peas, Parmesan rind, and Worcestershire. Bring to a boil cover and reduce heat. Simmer for 50 minutes.

    Remove Parmesan rind. Stir in kale, add sausage, oregano and soy sauce. Continue simmering for additional 15 minute. Taste to add salt and pepper.
