This Recipe came about as I have a Love for Cabbage Rolls. A friend had Visited Canada where a Small Downtown Café Serves a Cabbage Roll soup. I decided, What a great Idea for a Soup. Mine goes like this. This is a very thick soup. Feel Free to add enough water to your Desired Soup Consistency. Bet you go back for 2nds. Makes a BIG BATCH. It's EASIER than it Looks. These are My Personal Pictures. Hope You will give this a Try on these COLD winters Days.

Ingredients For cabbage roll soup by freda

  • CABBAGE ROLL SOUP
  • 1 1/2 lb
    ground beef or turkey, browned & drained
  • 1 dash
    celery, diced (or 2 stalks)
  • 1/2 c
    parsley, chopped fine (optional)
  • 3-4 c
    water
  • 2 c
    (1 can) low sodium Swansons beef broth
  • 4 c
    canned diced tomatoes (14oz can)
  • 1/2 c
    long grain rice or brown rice
  • 2 c
    green cabbage, chopped (or more)
  • SPICES
  • 1 Tbsp
    sugar
  • 1
    bay leaf
  • 1 tsp
    seasoning salt, (or reg salt)
  • 1 Tbsp
    pepper
  • 1 Tbsp
    garlic powder
  • 1 Tbsp
    wet beef base (can add 2 tbsp if you desire)

How To Make cabbage roll soup by freda

    Fry & brown ground beef in large soup pot over medium heat. Breaking it up as it fries into fine pieces.

    Once beef is half way cooked, add celery, onions and parsley. Continue to cook until onions are translucent.

    Add water, broth, diced tomatoes, along with all the spices. Bring to a light boil. (Taste test, if you need a bit more seasoning, feel free to add more to your liking.)

    Immediately add rice and cabbage. (REDUCE HEAT) Turn on low simmer and allow soup to simmer for an hour for the flavors to combine. (It's even better if this simmers for several hours.) Remove the Bay Leaf Before Serving. Watch your HEAT, . . . (Stir Often as if this is too High a Heat it will Burn)

    NOTE: This soup is quite thick, If you like a less thick soup, add water to your desired consistency. If you do not have tomato sauce, substitute tomato soup.
