An excellent alternative to the standard turkey soups that tend to get made after a holiday feast, this will remind your family and guests of warmer times! This version is mild enough that the kids have no problems with it. If you prefer things spicy (as I do!) then you can add your favorite form of heat in the pot or at the table! Enjoy!!

Ingredients For turkey tortilla soup

  • 16 c
    turkey stock
  • 2 c
    turkey pieces
  • 2 Tbsp
    olive oil
  • 4 clove
    garlic, crushed
  • 1 lg
    onion - chopped
  • 1
    red pepper - chopped
  • 2 can
    rotel tomatoes and chiles (10 oz mild)
  • 2 can
    pinto beans - drained
  • 1 can
    diced tomatoes (14 oz)
  • 1 lb
    frozen corn kernels
  • 1 can
    chopped green chiles (4.5 oz)
  • 2 tsp
    green chile powder (mild)
  • 1 Tbsp
    hatch chile powder (mild)
  • 2 Tbsp
    salt
  • 2 Tbsp
    sugar
  • 1 Tbsp
    cumin
  • 2 tsp
    dried cilantro
  • 1 tsp
    ground black pepper
  • 1/2 c
    lime juice
  • 1 bag
    tortilla chips
  • 8 oz
    shredded cheddar

How To Make turkey tortilla soup

    Heat the olive oil in a skillet. Saute the Garlic, Onion and Red Pepper for 4-5 mins - set aside

    In a large soup pot, combine Stock, Turkey, all canned ingredients, sauteed vegetables, lime juice and all seasonings/spices.

    Simmer for 1 hour

    Serve over crushed tortillas and garnish with shredded cheddar. Enjoy!!
