You can find Seto Fumi Furikake Rice Seasoning, Bonito Flakes and Kombu at most large supermarkets or Asian Markets or on Amazon. I came up with this recipe just by using some items I had around the pantry. Was hungry for a great flavored Japanese style soup. So this is what I came up with. Was delicious

Ingredients For pork meatball noodle bowl with umami broth

  • PORK MEATBALLS
  • 1/2 lb
    ground pork
  • 3 clove
    garlic
  • 2
    scallions chopped
  • 2 Tbsp
    fish sauce
  • 1 Tbsp
    mirin
  • 1 tsp
    toasted sesame oil
  • UMAMI SEASONING
  • 6 Tbsp
    bonito flakes
  • 1 Tbsp
    dried kombu
  • UMAMI BROTH
  • 8 c
    water
  • 2 Tbsp
    seto fumi furikake rice seasoning
  • 4
    dried birds eye chilies
  • 1 Tbsp
    umami seasoning
  • 2 Tbsp
    fish sauce
  • 1 Tbsp
    rice vinegar
  • 2 Tbsp
    sugar
  • 1 tsp
    toasted sesame oil
  • 1/2 c
    fresh cilantro chopped
  • NOODLES
  • 4 oz
    rice noodle
  • 1 tsp
    kosher salt

How To Make pork meatball noodle bowl with umami broth

    To make the pork meatballs. Place garlic, scallions, fish sauce, sesame oil, and mirin in a food processors. Process to a paste then mix well with the ground pork. Roll into small 1 inch meatballs and set aside.

    To make the umami seasoning place the bonito flakes and kombu in a food processor and grind to a fine powder store in a covered jar.

    To make the broth. Place water in a medium pot. Add the furikake rice seasoning, the umamin seasoning and birds eye red chilies. Bring to a boil. Reduce to a simmer and simmer for 5 minutes. Strain broth through a cheesecloth and discard the solids. You want to get a nice clear broth. Add the fish sauce, sugar, sesame oil and vinegar. Bring to a simmer and add the pork meatballs and let simmer for 7 to 8 minutes. Until meatballs are cooked. Stir in the cilantro.

    Meanwhile heat a large pan with water enough to cover the noodles and season the water with salt. Once the water is boiling remove from heat and add the rice noodles and let sit until noodles are soft. Drain and rinse with water adding a little olive oil so they don't get sticky.

    To serve Place noodles in bottom of bowl. Ladle the broth over noodles and top with more fresh cilantro and sprinkle on a little furikake seasoning for extra flavor and crunch.
