You have been working all day and sont feel like cooking but want something hot. When the wind is whipping and the temp is really cold my family and I love to sit down with this stew and hot cornbread. Warms you up and it feels like a cozy blanket wrapped around you. Hope you enjoy as much as we do.

Ingredients For barley stew

  • 1 box
    barley, uncooked
  • 6 c
    chicken broth
  • 1 can
    cream of mushroom soup, undiluted, large
  • 1 can
    carrots, sliced canned with liquid
  • 1 can
    vegetables of choice (peas, beans, potatoes,etc)
  • 1 c
    diced meat (chicken, ham, bacon, or beef) we prefer chicken
  • 3
    celery stalks, diced
  • 1 tsp
    onion powder, or 1 whole onion diced if preferred
  • garlic powder to taste (we like garlic so use it liberally)

How To Make barley stew

  • 1
    Pour all ingredients into a large slow cooker. Stir and cook on high until barley is soft. My cooker will get it done in two hours or a little less but each cooker is different so know how your cooker temperature runs so you can judge the seving time. If you think the stew is too thick, add more broth or water to obtain desired consistency.

    If you have leftovers you can freeze it in serving sizes of choice and reheat in microwave with no problems.

    Great with homemade cornbread.
