I obtained the base recipe from the internet and modified it to taste. This soup never lasts very long so double the recipe for more people. The doubled recipe will easily fit into an 8 quart soup pot.

Ingredients For alphabet soup

  • 1 lb
    ground italian sausage, mild
  • 6 c
    chicken or beef stock
  • 1 md
    onion, chopped fine
  • 5 clove
    garlic, minced
  • 1 c
    carrot, peeled and chopped
  • 1 Tbsp
    tomato paste
  • 1 tsp
    sugar
  • 1 Tbsp
    basil, dried
  • 1 Tbsp
    oregano, dried
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 1 can
    14.5 oz diced tomatoes, pureed
  • 1 can
    15 oz great northern beans, drained and rinsed
  • 1 c
    alphabet pasta, uncooked

How To Make alphabet soup

    In a soup pot, on medium heat, cook and drain Italian Sausage, then return to pot.

    Add onions and carrots, saute for 5 minutes, add garlic and saute for 1 minute longer. Add Tomato Paste and saute for 1 minute. Add Tomato puree and cook 2 minutes.

    Add all other ingredients, except pasta. Bring to boil, lower heat, cover and simmer for 45 minutes. Add pasta and cook 15 minutes or until pasta is tender.
