Way back when...lol, I used to work for Legal Seafoods and they had the best cioppino I ever tasted. I tweaked their recipe a bit to make it lighter, but it taste so wonderful, it's hard not to eat the whole pot myself!!

Ingredients

  • 2 tsp
    olive oil
  • 1 medium
    onion, chopped
  • 1/2
    of a lg green bell pepper, chopped
  • 3
    garlic cloves, minced
  • 1
    14-1/2 oz can crushed tomatoes
  • 1 c
    white wine, or you can use seafood or chicken broth
  • 1 c
    seafood or chicken broth
  • 1/3 c
    tomato paste
  • 1/2 tsp
    dried oregano
  • 1/2 tsp
    salt
  • 1/8 tsp
    red pepper flakes
  • 1 lb
    firm white fish such as halibut, cut into 1-1/2" chunks
  • 12
    littleneck clams, scrubbed clean
  • 1/2 lb
    medium shrimp, peeled and deveined
  • 12
    mussels, scrubbed and debearded
  • 2 Tbsp
    fresh basil, chopped
  • 1/2
    loaf crusty french bread

How to Make Sherry's lighter cioppino

Step-by-Step

  1. Heat oil in lg dutch oven over medium heat. Add onion green bell pepper and garlic. Cook, stirring until soft. Stir in tomatoes, wine, ( or broth,) broth, tomato paste, oregano, salt and pepper flakes.
  2. Bring to a boil. Reduce heat and simmer, covered for 30 mins. Uncover and add halibut. Simmer for 4 mins. Add clams and mussels. Cover and simmer another 3 mins. Add shrimp. Simmer, covered until clams and mussels open, about 5 mins. Discard any clams or mussels that don't open. Ladle soup evenly into bowls. Sprinkle w/ fresh basil. Serve w/ sliced crusty bread if so desired.
  3. If you want to keep this soup meal light, don't serve with bread. But I find I like to sop up any broth w/ a little of the bread! It's worth the extra calories and carbs! Calorie content is for soup only, not the bread. Calories: 356 per serving
