lion's den clam chowder

I got this recipe from a great little restaurant in Helena Montana called the Lion's Den. The owner was kind enough to give me her recipe, and I love it. YUM

Ingredients For lion's den clam chowder

  • 3-5 slice
    bacon
  • 1/4 c
    chopped green onions
  • 1/2 c
    chopped celery
  • 1- 3 Tbsp
    butter
  • 1- 3 Tbsp
    flour
  • 3 1/2 c
    whole milk
  • 1 c
    half and half
  • 1 tsp
    ham base (optional but good)
  • 1 bottle
    clam juice (8 oz)
  • 2 can
    chopped or minced clams (6 oz each)
  • 2- 4 md
    potatoes, peeled, cubed and cooked
  • salt and pepper to taste

How To Make lion's den clam chowder

  • 1
    Peel, dice and cook potatoes to almost done.

    Fry bacon until crisp, remove bacon and reserve. Pour off all but 1 Tbsp bacon grease and add celery and onion, saute until soft and translucent.

    Add butter and flour, cook for 1 to 2 minutes then add liquids and ham base. Cook until thickened.

    Add Clams and cooked potatoes, Heat through, adjust seasonings and either add crumbled bacon, or top bowls of chowder with it to serve. (You can also top with a few chopped chives or chopped parsley if you like)
