This is an easy way to impress your guests. I have served it at cocktail parties in cold weather. Also as a first course at dinner, substituting it as the starch.

For such a simple soup, we couldn't believe how much we loved this potato soup. Cooking the potatoes, green onions, and parsley in oil ahead of time helps the potatoes soak up tons of flavor. Rich and creamy, this potato soup will warm you right up. Serve with your favorite crusty bread or a few croutons. This potato soup will really surprise you; it’s not just your run-of-the-mill recipe.

Ingredients For french potato soup

  • 4 c
    diced potatoes
  • 1/2 c
    finely chopped green onions
  • 1/2 c
    chopped parsley
  • 4 Tbsp
    good olive oil
  • 1 qt
    chicken broth, low salt
  • 1 Tbsp
    salt
  • 1/2 tsp
    pepper
  • 2 c
    heavy cream
  • 4 Tbsp
    all-purpose flour
  • 1
    bay leaf
  • chipped chives, for garnish (optional)

How To Make french potato soup

  • Potatoes, onion, and parsley cooking in a pot.

    Saute potatoes, onion, and parsley in oil. Cover and cook on medium heat for 15 to 20 minutes, until potatoes are tender and translucent.
  • Remaining ingredients added to the pot.

    Add stock, bay leaf, and seasonings. Mix together cream and flour. Add to potatoes. Simmer 30 minutes. Remove bay leaf.
  • A spoonful of French Potato Soup.

    To serve: heat and garnish with chives.
