Ingredients

  • 2 c
    fresh or frozen blueberries or strawberries
  • 1.5 c
    water
  • 1/2 c
    sugar
  • 1/2 tsp
    orange peel, finely shredded
  • 2 Tbsp
    orange juice
  • 2 c
    buttermilk

How to Make Berry Buttermilk Soup

Step-by-Step

  1. Thaw berries, if frozen; drain.
  2. If desired, set aside 5 or 6 berries for garnish.
  3. In 1 1/2-quart saucepan combine berries, water, sugar, orange peel, and juice.
  4. Bring to boiling.
  5. Reduce heat; cover and simmer 20 minutes.
  6. Cool 30 minutes.
  7. Pour into blender container; cover and blend until smooth.
  8. Stir in the buttermilk.
  9. Cover and chill thoroughly.
  10. If desired garnish each serving with reserved berry or thin orange slice.
