cauliflower chowder

I always disliked cauliflower. When I was younger and babysitting for a family the mother made this and I tried it. I've been hooked ever since and eat cauliflower all different ways because of her. Even though the recipe doesn't call for it I will add broccoli to give it a little bit different taste. Soups and Chowders are one of my comfort foods. Give it a try let me know what you think.

Ingredients For cauliflower chowder

  • 1 1/2 c
    chicken broth
  • 1/4 c
    finely chopped onion
  • 1 c
    finely chopped celery
  • 1 c
    shredded carrot
  • 2 c
    chopped cauliflower
  • 1 c
    chopped ham
  • 3-4
    potatoes
  • 2 Tbsp
    butter
  • 2 Tbsp
    flour
  • 1 c
    milk
  • 1 c
    american cheese
  • salt and pepper

How To Make cauliflower chowder

    Peel, chop and boil potatoes and set aside.

    Simmer all veggies and ham (except potatoes) in chickien broth* for 15 minutes.

    In quart jar add flour and milk...shake well.
  • 4
    Add milk and flour mixture to broth slowly. Mix until bubbly.

    Add butter, cheese**, & potatoes. Mix on low until cheese melts. Serve

    *you can use homemade chicken broth, or store bought or boullion cubes - if using boullin cubes it is 1 1/2 boullion cubes per cup of water. **use a melting cheese - I find velveeta works the best.
