Don't let long list of ingredients stop you from trying this. After just a wee bit of chopping, all you have to do is open cans, dump them, then season. (If you don't use the seasoned tomatoes, simply adjust other spices to taste.)

I plan to explore using a variety of other vegetables, too.

    green pepper, roughly chopped
  • 1/2
    large yellow onion, roughly chopped
  • 4
    carrots, diced
  • 1/2 c
    red wine
  • ·
    drizzle of vegetable oil
  • 1 can(s)
    kidney beans, rinsed
  • 1 can(s)
    mixed beans, rinsed
  • 1 can(s)
    black beans
  • 7 oz
    can diced green chilis
  • 2 c
    frozen corn
  • 2 can(s)
    diced tomatoes, seasoned for making chili
  • 1 tsp
    garlic powder
  • 1 tsp
    paprika
  • 1 tsp
    cumin powder
  • 2 tsp
    chili powder
  • 1/4 tsp
    cayenne pepper
  • 1/2 tsp
    ketchup

How to Make Who Needs Meat Chili

Step-by-Step

  1. In large Dutch oven, saute carrots, pepper and onion until tender in wine and small amount of oil. Be sure to salt.
  2. Stir in beans, chilis, corn and tomatoes. Add ketchup, then season.
  3. Cook covered until it comes to rolling boil, turn down to simmer. Uncover and continue heating until it thickens.
