Ingredients

  • 2 1/2 c
    water
  • 1 tsp
    lemon pepper
  • 1 tsp
    cumin seeds, whole
  • 4
    chicken breasts
  • 1 c
    chopped onion
  • 2
    cloves pressed garlic
  • 2 can(s)
    shoepeg corn, not drained
  • 2 can(s)
    chopped green chilis, not drained
  • 2 can(s)
    great northern beans, not drained
  • 1 tsp
    cumin
  • 2-3 Tbsp
    lime juice
  • ·
    white tortilla chips
  • ·
    shredded Monterey Jack cheese

How to Make White Bean Chili

Step-by-Step

  1. Cook chicken breasts, in water with lemon pepper and 1 tsp cumin seeds until chicken is tender. cut into small pieces and add to liquid in pot.
  2. Saute 1 cup onion and garlic in olive oil until clear. Add to liquid in pot.
  3. Add shoepeg corn, green chilis, great northern beans, 1 tsp cumin, and lime juice. Heat.
  4. Serve over white corn tortilla chips and Monterey Jack cheese.
