Love Chili, but sometimes I need some variety. After perusing several recipes, I decided to wing it and came up with a bean filled Taco Soup that is easy to prepare and even easier to eat.

Ingredients For weekday taco soup

  • 2 lb
    beef, turkey, or chicken - ground
  • 1 lg
    onion, diced
  • 1 pkg
    taco seasoning mix
  • 1 pkg
    ranch dressing mix
  • 2 c
    water
  • 1 can
    tomatoes, diced w/juice (28 oz.)
  • 1 can
    green chilies, diced
  • 1 can
    chili beans w/juice
  • 1 can
    black beans, drained
  • 1 can
    kidney beans, drained (light or dark)
  • 1 can
    pinto beans, drained or pink beans, drained
  • 1 can
    white hominy, drained
  • cheddar cheese, shredded - optional
  • sour cream - optional
  • guacamole - optional

How To Make weekday taco soup

  • 1
    Place meat and onions in large pot and brown burger. Drain grease. Stir in taco seasoning, ranch seasoning and water. Simmer for approx. 15 minutes.

    Add chilies, chili beans w/juice, all the drained beans and hominy and stir thoroughly. Simmer approx. 20 minutes stirring occasionally.

    Serve with toppings such as shredded cheddar cheese, sour cream, and/or guacamole.
