This soup came to pass from cleaning out my pantry and freezer. Was quite a hit with my family. The use of ground pork instead of beef and pasta was a refreshing change. Mighty tasty soup!

Ingredients For ~ tasty orzo chili soup ~

  • 1 1/2 tsp
    olive oil
  • 1 lb
    ground pork
  • 1 md
    onion, chopped
  • 3 clove
    garlic, minced
  • 1 stalk
    celery, chopped small
  • 1 md
    red bell pepper, chopped
  • 1 - 14 oz
    can, chopped tomatoesd with garlic, oregano and basil - juice too
  • 3 Tbsp
    tomato paste
  • 1/4 c
    uncooked orzo pasta - or another small pasta
  • 2 c
    beef broth
  • 1 - 14 oz
    kidney beans, rinsed or favorite bean
  • 1/2 tsp
    beef bouillon paste
  • 1/4 tsp
    cumin or to taste
  • 1 1/2 tsp
    chili powder or to taste
  • salt
    & pepper to taste
  • 1/2 tsp
    oregano
  • sour
    cream, green onion and corn chips to garnish

How To Make ~ tasty orzo chili soup ~

    In a dutch oven over medium heat, brown pork in olive oil until no longer pink. Salt & pepper. Break apart as it cooks.

    Once pork is cooked, add onion, red pepper, celery and garlic. Cook and stir until onion is tender.

    Stir in tomatoes, paste, seasonings and beef broth. Bring to a boil, then cover and simmer for 35 minutes, stirring occasionally. Add the pasta and cook another 5 minutes or until tender.

    Serve with a dollop of sour cream, onion and corn chips.
