Lentil chili

I love to make this chili because my kids love it. I can sneak in vegetables and they don't even know it. You can use any type of beans you want in this recipe. We love to make ours with northern beans since they are creamier tasting.

  • 1 c
    lentils, dry
  • 4 1/2 c
    chicken stock (or vegetable)
  • 1 can(s)
    northern beans or any bean you like
  • 1 c
    frozen corn
  • 1/2 c
    carrots, diced
  • 1/2 c
    onion, diced
  • 2 can(s)
    diced tomatoes (14 oz)
  • 1 pkg
    chili seasoning, or you can add your own
  • 1
    jalapeno pepper chopped
  • 1/4 c
    cilantro chopped

How to Make Lentil chili


  1. First clean your lentils. In a pot add olive oil about 2 tbs. Saute carrots, onions, and jalapeno. Add lentils and and cook for 1 minute. Add 4c. of chicken stock, cilantro and bring to a boil and lower temperature to a simmer and cook for 30 minutes until lentils are cooked.
  2. When lentils are cooked add cans of diced tomatoes and remaining chicken stock. Add your package of chili seasoning adjust to your taste. Rinse your beans and add to the pot cook for 10 minutes more in the last 5 minutes of cooking add the frozen corn.
  3. Serve it hot or warm and top with cheese I like cheddar but you can do any cheese you like and don't forget sour cream. Eat with corn chips or crackers we like both.
