While searching for a less conventional way to use up a bag of sweet potatoes I got through my CSA (Community-Supported Agriculture) program, I found this recipe for Chili that includes sweet potatoes and a bit of cinnamon. This chili has a perfect Autumn feeling to it. It turned many heads and took 3rd place at a friend's chili cook-off and exchange! After making it once, I knew I had found something special, so I entered it in the contest. I STRONGLY recommend serving this with Greek yogurt! Recipe is adapted from an original recipe by user salt&light at allrecipes.com. All credit to her! :)

How to Make Harvest Sweet Potato Chili

Step-by-Step

  1. Place everything EXCEPT meat, beans, and corn, into a slow cooker. Stir well, and cook on high for 3-4 hours.
  2. After 3-4 hours, brown ground meat in a large skillet over med-hi heat. Drain grease. Add cooked meat, black beans, and corn to slow cooker; cook until flavors have blended, 1 to 2 more hours.
  3. Serve with none, any, or all of the following: Sour cream or Greek yogurt, shredded cheddar cheese, chopped scallions, oyster crackers, corn bread.

**I highly recommend serving this with Greek Yogurt. It's yummy without it, but the addition adds another wonderful dimension to this dish. Use Fage Total 0% or similar plain Greek yogurt. It's fat-free, but it tastes just as sinfully yummy as sour cream, so go ahead and glop it in there!
