In our home, we like to top the chili off with a little grated sharp cheddar and a dollop of sour cream. Perfect for game day.

Blue Ribbon Recipe

A simple Crock Pot chili that's robust and full of flavor. It's hearty, nicely seasoned, and packed with meat and beans. Fresh veggies make this chili a bit different. We loved the peppers in this chili. The red bell peppers are milder and almost sweet. The number of jalapenos scared us at first but totally worked in the dish (we removed the seeds). Slow cooking this recipe gives the flavors time to mingle. Serve this on your next game day.

Ingredients For too hot to trot beer chili

  • 2 lb
    ground beef
  • 8 slice
    bacon
  • 1 lg
    onion
  • 1
    green bell pepper
  • 1
    red bell pepper
  • 16 oz
    red kidney beans (drained)
  • 1 can
    stewed tomatoes (14 oz)
  • 3 c
    spicy V8 juice
  • 8 oz
    beer, not lite
  • 2 Tbsp
    cocoa, unsweetened
  • 2 Tbsp
    garlic powder
  • 2 Tbsp
    garlic salt
  • 3 Tbsp
    onion powder
  • 1/2 Tbsp
    cumin
  • 1/3 c
    good quality chili powder
  • 1 Tbsp
    Worcestershire sauce
  • 8
    jalapeno peppers
  • 2
    habanero pepper, fresh
  • 1 Tbsp
    fresh lime juice
  • 1 Tbsp
    spicy yellow mustard

How To Make too hot to trot beer chili

Unless you like things really spicy, we recommend removing the seeds from the jalapeno and habanero peppers. We also rinsed them in water to make sure no seeds got into the chili.
  • Browned ground beef and bacon in a slow cooker.

    Brown meat and bacon drain. Put in Crock Pot. ( I like to add the bacon dropping to the cooker.)
  • Chopped peppers and onions in the slow cooker.

    Chop peppers and onion. NOTE: For extra heat, do not remove seeds. Add to Crock Pot.
  • Spices added to the slow cooker.

    Add all spices; stir to mix.
  • Beer and V8 juice mixed into the slow cooker.

    Add beer and V8 juice and all other ingredients. Give it another stir place lid on the cooker.
  • Setting the slow cooker to cook.

    Set to high for 2 hours. Then to low for at least another 3.
  • Two bowls of Too Hot to Trot Beer Chili.

    Side note: spices are strictly to taste. Add more or less as the chili cooks. Hope you enjoy it.
